Cooking in an RV is notoriously difficult. There often isn’t much storage space, and the ovens are known to be difficult to cook with. The best RV recipes are simple. They have few ingredients and are easy to throw together after a long day out in the sunshine. We gathered this list of some of our favorite winter RV recipes – ready to warm you from head to toe.

Apple Butter Pork Chops

This one pan skillet pork chops recipe is quick and simple. Perfect for camping! Written by The Cookie Rookie, this recipe is made with apple butter and pork chops. It cooks quickly on a skillet with a seasoning of chili powder and brown sugar. Place a cooked apple on top of each pork chop and serve this warm winter recipe.  

Cast Iron Chili and Cornbread

Cast iron skillets are an easy cooking favorite for campers everywhere. This chili and cornbread recipe makes a whole meal in one pan. Although quite a few ingredients are used in this recipe, an entire meal in one skillet can’t be beat. The base ingredients of this recipe are ground beef, onion, celery, tomatoes, kidney beans, green pepper and cornbread mix. It’s seasoned with garlic, chili powder, cumin and more. And, of course, flavored with a bottle of your favorite beer.

Irish Stout Beef Stew

There’s nothing that warms you up in the winter like a hearty beef stew. This slow cooker Irish stout beef stew is made with carrots, potatoes, beef, onion and garlic. Among the other flavorings is a bottle of stout beer, though Guinness is recommended. Slow cookers are another favorite kitchen gadget for campers. They’re simple to plug in and heat up, and require little to no supervision. This makes them perfect for campers who are busy adventuring outdoors, and who come back to the RV with a grumbling stomach at the end of the day. This beef stew will be hot and ready to dig into!

Instant Pot Chicken Taco Soup

Similar to the slow cooker, the Instant Pot is a camper favorite. This RV recipe for chicken taco soup is a simple but filling recipe for RVers. Cook up a warm, delicious soup with chicken, black beans, kidney beans and corn. These hearty ingredients will both fill up tummies and warm you down to your toes. Top with crema, shredded cheese, cilantro or chips and enjoy.

 Instant Pot Bacon Cheeseburger Soup

Another Instant Pot recipe, this bacon cheeseburger soup does require a few more ingredients than our other recipes. However, this warm, cheesy soup will be well worth it on a cold winter night. The main ingredients of this bacon cheeseburger soup are bacon, ground beef and pork, onion, potatoes, chicken broth, Colby Jack cheese, cheddar cheese, tomato and heavy cream. Season it with the recommended ingredients, or with whatever seasonings fit your family’s taste, and enjoy this creamy RV recipe.

Mediterranean Salmon Foil Packets

Campfire foil packs are perfect for off-grid and overland camping, or if you just want to try a fun new way to cook your meals. This RV recipe is simply salmon, pesto, onion, grape tomatoes and feta cheese. Throw these five ingredients, and any other seasonings you’d like, on a piece of tin foil that’s been sprayed with cooking spray. Pinch the foil together around the sides and place in the oven or by the campfire to cook. Once the salmon easily flakes with a fork, your Mediterranean salmon foil packs are ready to eat.

Grilled Corn Chicken Soup

This grilled corn chicken soup does require more effort and time than some of our other winter RV recipes, but it’s sure to be well worth it! You start by grilling corn on the cob, before removing the kernels to add to your soup. The main ingredients are corn, cooked chicken breast, bacon, green onions, milk, butter and heavy cream. Once the soup base is prepared, simply mix in your cooked chicken and bacon and chow down.

Swiss Steak Crock Pot Supper

Another mouthwatering Crock Pot recipe, this Swiss steak supper is sure to please the whole family. It’s made with some warm winter favorites like steak, potatoes, carrots, onion and tomatoes. The beef should be cooked in a skillet first for six to eight minutes. Then, add your ingredients with beef gravy mixed into the slow cooker. It cooks for seven to eight hours on a low temperature. This Crock Pot recipe is perfect for RVers who have a day of adventure away from the campsite planned, but want to come home to a warm meal ready and waiting.

PB&J Overnight Oats

The last addition to our winter RV recipes list is a breakfast recipe for good measure. On camping trips, it’s important to start the day with a solid protein-based breakfast. Overnight oats are a great choice because they require little work, are ready when you are, and are easy to eat on the go. Simply add oats, almond milk, chia seeds, maple syrup and peanut butter to a large mason jar. Stir these ingredients, then add a topping of jam. In the morning, these protein-packed oats will be ready to help you jump-start a day of hiking the trails, visiting historical sites, or spent on the water.
